Extremely delicious shortcakes will melt in the mouth in a second.

Apples in the shortbread

Dough: 3 cups flour, ½ cup caster sugar, 1 cup margarine, 2 yolks, 3 tablespoons of clotted cream.

Stuffing: 8 apples, 1 cup shelled nuts, 3 tablespoons of sugar, 2 tablespoons of raisins or strained jam.

Cream (not necessary): 2 whites of the egg, about 10 teaspoons of sugar.

Prepare the dough: resieve flour and caster sugar, put not very solid margarine, yolks and clotted cream. Cut with a knife and then mix with a hand.  Put it in the fridge for an hour. After an hour roll the dough and cut into the big quadratic forms (in order it would be possible to roll in the apples).

Prepare the apples: wash the apples, husk, cut in two, cut out the seeds. Cut places fill in with chopped nuts mixed whether with sugar or raisins, jam (but it is possible to fill in with sugar only). Put the apple halves on the quadratic forms of dough (place which is filled with nuts have to be in the same side where the dough was sticked up otherwise the dough will tear). Place the „cookies" into the greased baking tray. Sticked up side has to be at the bottom. Make the pinpricks with a fork. Bake at 180 0 degrees for about 30min. Whip the whites of egg (in order it would be possible to cut them with a knife), put sugar, whip again till it will be solid (not runny!). When „cookies" become golden color, take the out of the oven (temperature of the oven has to be reduced to 120 degrees) and put the whites of the egg combined with sugar on the cookies. Bake in the oven for about 10-15min. Serve still warm.
